These porcelain molds were once used in a French kitchen to mold the classic French soufflé.  The ridges on the exterior are meant to mimic the pleats in a French chef’s toque.  

About French soufflé molds

The mold is characterized by its deep, straight sides and a wide, flat base. The straight sides help the soufflé to rise evenly, while the wide base provides stability and support during the baking process.
