These porcelain molds were once used in a French kitchen to mold the classic French soufflé. The ridges on the exterior are meant to mimic the pleats in a French chef’s toque.
About French soufflé molds
A French soufflé mold, also known as a “moule à soufflé” in French, is a specialized baking dish used for making soufflés. It is designed to help the soufflé rise and maintain its shape during baking.
French soufflé molds are typically made of ceramic or porcelain, although you may also find metal or glass versions. The ceramic or porcelain material is preferred due to its ability to distribute heat evenly, allowing for even baking and proper rise of the soufflé.
The mold is characterized by its deep, straight sides and a wide, flat base. The straight sides help the soufflé to rise evenly, while the wide base provides stability and support during the baking process.
